Suya spiced roast potatoes
Never mind the fact that these roasted potatoes are arguably healthier. No deep frying pan in sight. These are dusted with West Africa’s suya spice before roasting for that extra flavour. They can be served as part of any meal, although they particularly go with roast or tray baked chicken.
They come encased in a crunchy, golden shell with a fluffy middle still steaming from the oven that have been infused with suya-virgin oil.
Roast the suya flavoured potatoes in the oven for 40 minutes to 1 hour or until browned and crisp. You can use a spatula to turn them during cooking in order to ensure even browning.
