Spiced Roast Pineapple
Spiced roast pineapple is not the only thing that has been on my mind. Family has been on my mind this Easter holiday too. Not necessarily the traditional way in which most define family, but a broader and more encompassing way. One that extends beyond blood relations. I spent Easter Sunday with a group of people I got to know a little bit better as I volunteered to drive a van helping to ferry equipment for a celebratory Easter Sunday event. Laughter, camaraderie, creativity, hard work, good food and a solid 12 hour shift later and I am wondering if family can be redefined. After all, as the saying goes isn’t “family what you make it?” Perhaps the true relationship, bond or fellowship that links a family is not one blood, but regard, admiration and honour as well as the feeling of great pleasure in each other’s life.
Like the pinneaple there may indeed be a need to remove the eyes, those thorny looking inedible bits that dot the perfectly yellow surface of the pineapple. Families continually go through that process of removal, but there is no escaping the fact that those eyes are no bigger than the sweet yellow bits of a pineapple and when removed perfection and complete sweetness becomes the norm. The sort of perfection that leads to love, support, protection, guidance and which creates a safety net for when that inevitable fall or fallout happens.
