Quimbombo similar to gumbo is okra based and has it’s origins in Africa. It is a popular stew in Cuba and is known to have been introduced into Cuba through the slave trade.



4 slices of bacon cut in pieces

1 pound pork

3 garlic cloves, crushed

1 teaspoon salt to taste

1/2 teaspoon ground cayenne pepper

1/2 cup fresh orange juice and fresh lime juice in equal amounts

1 or 2 large chopped onions

1 each of green, yellow and red bell peppers chopped

1-2 large tomatoes quartered

1/2 cup dry red wine (or white)

1/2 pound fresh okra


1Rinse the okra pods well and blot the pods with paper towels.

2Mix the citrus, crushed garlic, a pinch of salt and cayenne pepper in bowl

3Pour contents of bowl over the pork to marinade it for an hour or more (You can store this in the refrigerator)

4Oven cook the bacon for about 2 minutes until it starts to render its fat on medium to high heat

5Drain marinade from the pork and put the pot on high heat for about 5-8 minutes

6Lower heat to medium and add tomatoes, onions, bell peppers and sauted bacon for about 5 minutes stirring regularly

7Add the wine to the mix and reduce heat slowly (optional)

8Leave to simmer for 10-15 minutes

9Cut the okra in quarter inch rounds and discard the ends

10Add cut okra to the mix and continue to cook for a further 10 minutes

11The pork should now be cooked through and tender
