An easy and healthy dish not just for breakfast, but perhaps even as dinner. Kontomire leaves or spinach as it is more widely know is the star ingredient here.
Ingredients
100g bag kontomire or spinach
50-100g mushrooms
1 onion
2 teaspoons vegetable oil
1 tsp chilli flakes
4 eggs
1 maggi cube (optional)
Directions
1Saute onions in oil until tender
2Add the mushrooms and kontomire leaves and continue to salute for another 3-5 minutes
3Set the sautéed onion, knottier and mushrooms aside
4Crack and add the eggs and chilli flakes to the mixture and mix well
5Add half or 1 cube of maggi or any spices of your choice
6Pour contents into a baking bowl
7Heat oven to 200C/180C fan/gas 6.
8Put the baking bowl into the oven and bake for the next 10-15 minutes depending on how you like your eggs.
