Ghana Chicken stew with rice holds a special place in my heart. This dish signified new beginnings and transition from boyhood into manhood. This was the dish my family had every Sunday without fail. The day that we all put on our Sunday best and waltzed into church.
Ingredients
1 whole layer or stewing chicken chopped
3-5 large tomatoes or 1 can of tomatoes
1/2 teaspoon smoked paprika
1/2 teaspoon ground cayenne
1/2 teaspoon coriander seeds (optional)
1/2 teaspoon ground caraway (optional)
Peppers according to taste (can use green peppers, scotch bonnet or kpakpo shito)
Green, yellow and red bell peppers (optional)
2 large onions
1 teaspoon of tomatoes puree
2 cloves of garlic
Salt to taste
A cup or two of vegetable oil
Rice and Plantain
Directions
1Wash the chicken well and add spices such as garlic, cayenne powder, ground caraway etc to marinate
2Leave to stand for 5 minutes and then boil for about 30 minutes (if using layer or stewing chicken) in a little water to prevent it from sticking to the pot
3Cut the onions and add half to a mixture of the tomatoes and peppers to blend
4Put the coriander seeds in the pan on medium to high heat until they start crackling and releasing their flavour
5Add cooking oil in the pan and add the chopped onions after about 4-5 minutes when oil becomes hot
6Add the the boiled chicken pieces (save the chicken stock for later) to fry for about 5 minutes, turning constantly until the chicken is brown
7Add chopped onions and red, green and yellow bell peppers to the frying chicken and after about two minutes pour in blended tomatoes, onions and peppers
8Add chicken stock and cook for 20-30 minutes and simmer on low heat in the last 5-10 minutes and leave to stand.
9Fry plantain and Cook rice as side dishes to serve with chicken stew
Please note that the type of chicken used is interchangeable, however, the boiling times will differ. While a layer chicken which is tough may take 30 minutes to boil a broiler chicken, may only need 10 minutes of boiling time.
