Yam Pottage also known as Asaro is a mashed boiled yam dish. This meal is one more addition to the plethora of yam based dishes across Africa.
Half a tuber of a medium sized yam
2 cups palm oil
4-6 large tomatoes
1-2 medium sized onions
3-4 tablespoons of cray fish
Spinach in desired quantity
1-2 teaspoons of cayenne pepper
1-2 teaspoons of sugar and salt to taste
1Peel and chop yam into cubes or desired sizes
2Heat palm oil in a pot for a couple of minutes until hot
3Add blended tomatoes, cray fish, cayenne pepper and onion in the pot.
4Add the yam pieces to the blended mixture and cook for 15-20 minutes on medium heat or until yam is fully cooked.
5Add sugar (optional) and salt to taste
6Add the spinach to the mixture when the yam is almost cooked
7Reduce heat and leave to cook for the last 5-10 minutes.
8Serve with a side like lamb stew
Add water to the mixture if need be as you cook
