Never mind the fact that these roasted potatoes are arguably healthier. No deep frying pan in sight. These are dusted with West Africa’s suya or chinchinga spice before roasting for that extra flavour. They can be served as part of any meal, although they particularly go with roast or tray baked chicken.
Ingredients
4 large potatoes cubed
5 tablespoons of suya spice
2 tablespoons of olive oil
1 teaspoon of thyme
Half teaspoon ground cumin (optional)
Half teaspoon of paprika (optional)
Half teaspoon of chilli flakes (optional)
Directions
1Mix the olive oil with all other ingredients in a small bowl
2Pour the contents of the bowl on the cubed potatoes and mix well so the potatoes are covered with the marinade
3Transfer the potatoes onto a baking tray
4Rost for between 30-40 minutes on medium to high heat
