South Africans love their braais, but as they would have you know, an essential ingredient to a fine braai is a South African potato salad. It is creamy, flavourful and goes down well on sunny days and warm nights. They will also tell you that a traditional South African potato salad is not by any means like other potato salads. Their’s is special. It has the colour of bridesmaid gowns, soft, pale and elegant. Aromatically exquisite, the South African potato salad has an astonishing flavour.
3-4 large potatoes, peeled and cubed
1-2 spring onions, finely chopped
A quarter or half red onion diced
2 tablespoons of parsley, finely chopped
100 ml mayonnaise
Half teaspoon ground black peppercorns
Salt to taste
1Boil the potatoes, after adding salt to the water for about 7-10 minutes on medium to high heat or until it is ready
2Boil the eggs in a separate pot at the same time as boiling the potatoes (7-10 minutes)
3Drain out the water from the potatoes pot and set the potatoes aside to cool.
4Remove the eggs from the pot, remove the shells and allow to cool then slice these into quarters.
5Mix the spring onions, red onions, parsley, ground peppercorns and mayonnaise in a bowl
6Add the set aside potatoes to the bowl to coat with its contents
