SALADU AWOOKA ÀK MANGO (Mango and Avocado salad)050
Saladu Awooka Àk Mango is a Senegalese fruit salad I absolutely love serving as a first course at lunchoens or in place of a course of fruit at dessert. For a first course I'd recommend juicing the Saladu Awooka Àk Mango with citrus either lime or orange whereas if served as dessert then it should be enjoyed sweetened and more highly flavoured
2 ripe mangoes, peeled, deseeded and cut into 1⁄4″ slices
2 ripe avocados, pitted, peeled, and cut into 1″ slices
2-3 tablespoons of fresh orange juice
A dash of ground black pepper (optional)
1Whisk together the fresh orange juice and ground black pepper in a large bowl.
2Add the mangoes and avocados, and toss gently to combine.
3Cover with plastic wrap, and refrigerate to fuse flavours for about an hour.
