Red Red is simply black eyed beans in tomatoes, onion, pepper, palm oil mix sauce served traditionally with fried plantain and or tatale. This meal must have elicited so much red passion and excitement in folks that it was named twice! Red Red!

Ingredients

2-3 cups Black eyed peas

1 cup Red palm oil (alternatively you can use vegetable oil)

1-2 Chopped onions

4-5 Medium sized tomatoes

1 large smoked salmon or dried fish and/or one spoonful shrimp powder

dash Cayenne pepper

dash Salt and black pepper

Ripe plantains

Directions

1Soak the black beans in water for at least an hour to overnight.

2De-bone smoked fish

3Put black eyed beans in a pot and cover with water over the beans and bring to boil

4Cover and continue to boil beans until beans become tender after about 45-60 minutes

5Heat oil in cooking pan and fry the onions until slightly browned.

6Add tomatoes, smoked fish and dried shrimp (if included) to frying onions and stir to form a sauce for about 15-20 minutes.

7Pour boiled beans and ddd salt and spices such as cayenne pepper to taste to the stew mix.

8Leave peas and sauce to simmer whilst you prepare plantains to fry

9Serve red red and plantains side by side on a plate
