This is a potato mash that includes a corn and green peas combo. Whether prepared to mop gravy as in Kenya’s nyama na irio or as a side for say, a typical East African Nyama Choma or a West African suya kebab, Irio is a fantastic mash.
Ingredients
I kg potatoes
250g of green peas
250g of corn
100-250g unsalted butter
1/4 cup milk
salt to taste
Directions
1Boil potatoes until almost cooked
2Boil the green peas and corn until tender
3Drain boiled and potatoes and add drained peas and corn to the pot
4Mash potatoes, green peas and corn adding the butter and milk
5Add salt and black pepper to taste
Canned peas and corn can be used but do bear in mind that these come pre-cooked
