Groundnuts are a West African favourite. Pureed they can be made into incredible soups and stews. As a street food it has few equals. Glazed with honey and then baked, it turns into a snack made for when you just want to munch on something sweet to while away the time. Foe those moments of relaxation after a hard day's work, I guess.
200g of roasted groundnuts
20g of butter
3-4 tablespoons of honey
half a teaspoon of salt
1Place peanuts in a baking tray or bowl.
2Mix and heat heat the butter and honey together for about 2-4 minutes or until warm.
3Spread the groundnuts on the baking tray and bake at 350 °F (177 °C) for 20-30 minutes; After the first 15 minutes, check the groundnuts and stir to make sure they are all well covered and glazed.
4Remove and stir as the glaze darkens.
5Sprinkle with salt (Optional) or sprinkle with sugar if a sweeter taste is preferred.
6If preferred, break
7Note: Do not bake excessively or else it will turn too dark. Aim for a golden tinge. Use a spoon to break the glazed groundnut up into single nuts if preferred.
