An Omelette with toasted bread (great meal if you are planning on shutting your brain and lazing about with a remote control in hand) but with duck eggs instead of chicken’s!
Ingredients
5 Duck eggs
6 Small mushrooms
2 or 3 tomatoes
Spinach
Spring onions
1/2 Teaspoon cayenne powder
1/2 Teaspoon cumin powder
1 Tablespoon basil
Salt to taste

Directions
1Crack eggs into a bowl
2Add salt and cayenne pepper and whisk to mix well
3Put vegetable oil (or butter) into frying pan
4Heat oil for about 4 minutes on high to medium heat and add chopped spring onions, mushrooms, tomatoes
5Fry contents for about 4 minutes then pour in duck egg mixture with strips of spinach and spices
6Turn egg over after about 3 minutes and leave to cook for a further 2 or 3 minutes
7Sprinkle grated cheese and serve immediately
8Oven cook sausages and bacon for about 10 minutes or until brown and ready.
