Arroz Congri personifies the fusion of two dominant groups in Cuba – Africans and Spanish. It’s nickname is Moors and Christians or black beans (African) and white rice (Spanish).

Ingredients

Dry Black beans

Rice

Onions, garlic and green, red and yellow bell peppers

Tomatoe paste

Cumin

Chicken broth (optional)

Directions

1Cover dry black beans with water and bring to a boil for an hour

2Remove from heat and let stand for an hour. Drain the beans.

3Sauté the onion, garlic, and bell peppers in olive oil until tender.

4Add tomato paste, dry black beans, cumin and chicken broth.

5Add rice

6Cover mixture and cook over low heat, stirring occasionally until rice is fully cooked (about 30 minutes).

7Add salt and pepper to taste.
