“The taste – we are different from other types of Suya,” says Mr Salisu, who has cooked and sold the barbecued meat at Lagos’s famous “University of Suya” at Allen Avenue, Ikeja. “We add ginger, groundnut, pepper, maggi, salt – to make it more sweet!”
